How it Works Handbook: A Guide to University Food Systems and Local Food Programs
Campus communities have food systems much like small cities with populations of students, staff, administrators, and faculty.
With large purchasing power and a consistent (yet seasonal) consumer base, campus communities can provide market opportunities for local
farmers and food businesses and support the local food economy.
The goal of the University Food Systems (UFoods) project has been to contribute to the building of local food systems using research and
outreach activities specific to six partner universities in North Carolina.
Five of the six are 1890 Historically Black Colleges and Universities, and the sixth is a historically-American Indian Institution.
